At Spin Cider, we produce cider like wine, because that's what it is - wine made with apples rather than grapes. We press all the apples in the fall, by hand to ensure we use only quality, ripe fruit. We ferment the juice slowly, using selected wine yeasts that bring out the best of the fruit. Then we age the ciders for at least 6 months to let the flavors really develop. When the ciders are ready, we blend them to emphasize the flavors of the fruit.
